The Infamous Banana Bread

Those of you who have visited me when I run the tea room at Judy’s Affordable Vintage Fair will know about the banana bread that I bring with me. The secret is to add lots of chocolate chips and really overripe bananas. I must confess that it’s not actually me who makes it, my boyfriend is the mastermind behind this recipe!

So many of you have asked me about it, I thought I would share the recipe with you.

  • 175g unsalted butter, softened
  • 175g sugar
  • 2 organic, free-range eggs
  • 175g self-raising flour
  • 2 very ripebananas
  • splash vanilla extract
  • 175g dark or milk chocolate chips
  • a little demerara sugar

  • Preheat the oven to 170C/325F/Gas 3.
  • Line the base and sides of a loaf tin with baking parchment
  • Cream the butter and sugar together until light and fluffy.
  • Slowly add the eggs to the butter and sugar mixture, then mix in the self-raising flour.
  • Peel the bananas and chop them the small pieces. Gently fold the vanilla extract, the bananas and the chocolate chips into the cake mixture, turning gently and taking care not to overmix.
  • Spoon the cake batter into the lined loaf tin. Dust with a little demerara sugar. Bake for between 1 hour and 1 hour 10 minutes, covering the cake with foil if the top starts to darken too quickly.
I make this as a loaf but you can also use this batter to make muffins – delicious at breakfast!
