Pink Lemonade

The sun has got his hat on, hip hip hip, hooray!

This weekend is set to give us the hottest day of the year so far so we’ll need a little refreshment. I serve a homemade pink lemonade at my tea parties which everyone loves and it’s really easy to make.

Pink Lemonade Cordial

Makes – 1 litre


3 Unwaxed Lemons (preferably organic)

300g Caster Sugar

850ml Boiling Water

2 tsp Citric Acid

Handful of Raspberries



Use a speed peeler to peel the rind from the lemon but leave the white pith behind.Put the peel into a large glass jug or bowl then cut the lemons in half and squeeze the juice only over the top.

Add the sugar to the bowl

Pour over the boiling water and stir until it is all dissolved.

Add the citric acid (I order mine online but if you haven’t got any just add the juice of 1 more lemon)

Throw in the raspberries.

Leave everything to steep and infuse overnight.

The next day strain the liquid into a bottle and it’s ready to go.

Serve it with still or sparkling water for kids, grown ups can give it a try with gin/vodka and soda.
